| This peeling agent for fruit and vegetable is a solution of trisodium phosphate, lauric acid and weak alkali. The fruit or vegetable is peeled after soaked in it for 10 min and the peeled fruit or vegetables are soaked in 0.2% citric acid for neutralization and in solution of 0.3% sodium sulfite and 0.2% citric acid or 2% edible salt and 0.2% citric acid for colour and fresh keeping. | |||
