Abstract:
     The method for peeling shell of Chinese chestnut makes use of a kind of peeling agent composed of enzyme and inhibitor, and the enzyme includes pectin enzyme and cellulose enzyme, while the inhibitor includes SO2, sulphurous acid and its salt. The present peeling method makes nut kernel not be damaged in appearance and changed in color and taste, and the obtainment rate is above 85%.
