Abstract:
     The invention relates to a method of adding alcohol as a penetration aid into the processing liquor and at the same time adding the aqueoous alkali of proper concentration and making the peeling treatment at lower temp., it is suitable for the processing of crop products, such as fruits, vegetables, etc. The equipment is a special-purpose treating device provided with thermal insulation and airtight conditions for water bath. By using this invention the peeling rate of 100% can be obtained, the product yield rate will be more than 85% and the peeling effectiveness of reducing the loss of vitamine C by 15% will be obtained, the peeled fruits and vegetables are suitable for the processing of various marketable products.
