Abstract:
     The invention relates to a kind of peeling method which makes the smallest loss and damage of eatable part. In the cource of using the method, the foods are continuously fed and discharged in a container. Passing through the container, the foods accept radiant heat which is 340-705 deg.C, in temp. and accept contact heat of fluid with same temp. in the container. The pressure level in the container is not higher than 2 bar (gauge pressure). The foods stay for 8-75 seconeds in the container, then the foods are immediately put under the ambient temp. and pressure.
