Abstract:
    Disclosed is a microwave modifying method for alcohol process soybean concentrated protein, which consists of preparing aqueous solution from alcohol process soybean concentrated albumen powder, adjusting pH, carrying out microwave processing and centrifugal separation, drying the centrifugation liquid and disintegrating. The dissolution index and functional properties of the concentrated protein can be improved.
