Abstract:
     The invention relates to method for preparing fermented germinated soybean using biotic fermentation, relates to production method of bean biotic fermented food. To solve the problem of bean health product produced by microorganism technology, In the inventive method : using soybean as material, soaking the material and making it germinate, adding ferment adjuvant and proper water to geminated soybean , steaming 20-40min under 100-120DEG C, controlling adding volume of ferment adjuvant in 2%-6% of soybean material weight, water-filling volume being 60-90% of germinated soybean volume in weight, adding biotic ferment when solution cooling to 35-45DEG C, fermenting 18-36 hours in closed container under 30-40DEG C, controlling adding volume of biotic ferment in 3%-6% of soybean material in weight. The soybean produced by the inventive method has good taste and unique flavor, is enriched in multiple organic acid, vitamin, polypeptide and amino acid and biotic with biological viability.
