Abstract:
     A process for preparing rice protein by microbial fermenting method includes such steps as crushing rice grains, immersing, adding at least one of cane sugar, soybean powder, potassium dihydrogen phosphate, beef extract, peptone, liquid extract of corn and yeast extract, heating at 80-100 deg.C for 20-60 min, cooling to 20-40 deg.C, inoculating bacillus, fermenting for 2-3 days, liquefying for 5-10 hrs, filtering, concentrating and drying.
