| The present invention discloses shrimp extract and its making process. The shrimp extract consists of fresh shrimp enzymolyzing powder 25-45 weight portions, sodium glutamate 25-43 weight portions, concentrated fresh shrimp enzymolyzing liquid 10-20 weight portions, sugar 8-12 weight portions, I G 2-6 weight portions, modified starch 2-5 weight portions, maltodextrin 0.7-1.3 weight portions, shallot powder 0.5-1 weight portions, beta-carotene 0.1-0.3 weight portions, and aniseed oil 0.1-0.2 weight portions. The technological process includes the main steps of cooking fresh shrimp, pulping, enzymolysis, enzyme deactivation, concentration, drying, pelletizing, sieving, etc. The shrimp extract as one kind of compound seasoning may be used to replace sodium glutamate and chicken essence. | |||
