Abstract:
     The freezing storage method for fresh jujube includes the following steps: precooling the fresh jujube to 0-5 deg.C, freezing at 30-192 deg.C below zero, storing the frozen jujube at 20-192 deg.C below zero, defreezing temp. is 0-5 deg.C and relative humidity is greater than 50%. Said invented method can prolong the storage period of fresh jujube to above 12 months, and can make the defreezed jujube after frozen storage retain the original nutrients and taste of fresh jujube.
