Abstract:
     The calabash foods of the present invention include preserved calabash, soft calabash sweet and canned calabash. The technological processes of preparing preserved calabash include cutting, soaking in water, hot scalding, soaking in sugar solution, stewing, sugar soaking and drying; those of preparing soft calabash sweet include filtration of mixed solution of soaked gelatin and agar, sugar and starch syrup, cooking of the filtered liquid and beated calabash, mixing with citric acid and essence and cooling to form; and those of preparing canned calabash include cutting, soaking in water, hot scalding and compounding.
