Abstract:
     The process in conformity with the present invention comprises rolling fresh shrimp head and / or small shrimps, hydrolyzing enzymatically, filtering, washing, concentrating in depression, salting and adding of L-ascorbic acid to make flavorous substance shrimp head paste. Proteins such as yolk-eliminated egg white and condiment are mixed evenly, moulded and heated to solidify, and finally taken out off the module to get shrimp food. Its advantages are as follows: easy process, simple equipment, little investment, rich in raw materials, and big benefit; it preserves the multiple flavours of high boiling point and high carbon organic amines in fresh shrimps; its colour, flavour, smell, shape and taste are like those of real shrimps, but its cost is just one-fourth of them.
