Abstract:
     The present invention relates to one kind of fresh water fish scale food and its producing process. The fresh water fish scale food is one kind of compound including the transparent chitin layer and collagen layer from fish scale, and the production process has the slime layer and pigment layer of fish scale eliminated. The production process includes four steps: rinsing fish scale to eliminate foreign matters; heating in water at 80-95 for 5-15 min; kneading and washing heated fish scale in vinegar and salt solution to eliminate slime layer and pigment layer and obtain the compound of transparent chitin layer and collagen layer; and rinsing the transparent fish scale in clear water. The present invention processes fish scale into one kind delicious health food with rich nutrients and no fishy smell.
