Abstract:
     The invention provides a technological process of producing maltose with high content. The characteristic of the technique is to use rice directly as feedstock to produce high content of maltose, which involves powdering of the dipped rice, adding alpha-amylase and malt at the liquefaction stage, and adding iso-amylase and bta-amylase at the saccharification stage. The syrup of high content of malfose produced by this processing has at least a glucose saccharified degree (DE value) of 50.5, with glucose content not more than 10 percent and maltose content hot less than 78 percent.
