| This invention belongs to a preparation technology of syrup with colouring of sugar by use of grape syrup or starch syrup under the condition of alkalinity. As the sysup with colouring of sugar made by this technology is compared with the caramel made by the general stir-fried cane sugar, the transparency of colouring is better, the lustre effect and sense of reality are stronger, the carbonization is lower, and has better flavour and taste. By use of this technology, through the control of reaction time, temp. and concn. of alkali, a series of colouring of sugar from light yellow to deep red are made. As compared with stir-fried caramel, its production cost is reduced and is especially suitable to be used as colour mixing agent for beverage and preparation of wine. | |||
