Abstract:
     The present invention relates to a malt syrup containing alpha-amino nitrogen and its preparation method. Its composition includes alpha-amino nitrogen, maltose, monose, trisaccharide, tetrasaccharide, non-sugar, and the ratio of sugar to non-sugar is less than 1 : 0.25-0.4. Its preparation method includes the following steps: adding water to cornstarch, adding 0.1% alpha-amylase to make liquification, adding beta-amylase to make saccharification, evaporating to obtain malt syrup, then adding neutral or acid proteinase in corn protein liquor, filtering to produce proteolysate, then mixing the malt syrup and proteolysate of alpha-amino nitrogen so as to obtain the invented product. Said invention can ensure quality of beer, make its quality stable, can prevent beer from ageing, can extensively be used in production of beer, and its production efficiency is high.
