Abstract:
     Through a simple technological process, effective components tri-, tetra-and penta-frustose content is raised and oligomer fractose in sucrose solution is increased. Aspergillus niger V. Tiegh strain in two-stage cultured to obtain fructore transferase, which in added into 30-50 % concentration sucrose colution in a enzymolyzing tank to produce the first enzymolyzing contact reaction at pH 5-8 and 65-70 deg.C for 8-10 hr. The product of the first enzymolysis is filtered and the filtered sucrose size is enzymoplyzed and filtered for the second time.
