Abstract:
     Sugar containing starch paste is passed through a pipe with external heating. The paste inside the pipe is kept at 110-125 deg.C for 3-8 mins. to complete simultaneously cooking and concentrating. Soft candy paste coming out at the other end of the pipe satisfies all physical/chemical specifications of finished product. Both productivity and quality are much improved by this technology.
