| The process combines dilute sulphuric acid soaking dechromisation with hydrogen peroxide oxidation dechromisation, and proceeds zymolysis by neutral or alkali protease. After colloidal condensation under high temp., collosol is carried out at pH 5.0---7.0 and 60--85 deg.C. The dechromisation results in a complete gelatinization in a short period of production, and gelatin yield is higher than 50%. All products are edible gelatin. | |||
