Abstract:
The determination of lysogeny of bacteria T6-13 for producing glutamic acid (monosodium glutamate) belongs to food fermentation technique. The present invention puts forward a method for the determination of lysogeny of Tian jin short bacillus T6-13 usually used in present domestic monosodium glutamate production. It adopts mutagen-mitomycin C to induce lysogeny bacteriophage in the producing bacteria, and then sensitive indicating bacteria are used to determine the releasing property of the bacteriophage. Monosodium glutamate production is an important department of food fermentation industry, it has suffered heavy losses due to usual infection of bacteriophage. The present invention finds out the cause and way of occurence of bacteriophage in monosodium glutamate production and offers effective determination method for industrial production.
