Abstract:
     In this invention, 1.30 black mold, which has steady function and high activity, is used as spawn and cultured on solid medium of wheat bran for 24-30 hours. The culture is then extracted with 1% salt water in 1:5 volume ratio. The liquid pectase preparative thus obtained shows high activity (up to 20000u/ml) and low consumption (0.5-1%. in general). It is nontoxic and sanitarily safe. When used for processing fruit juice, vegetable juice, fruit wine, yield of juice and rate of clarification can be increased.
