Abstract:
     The sample of microbe is collected from cellar storing high-quality wine. After culturing and domesticating many times, a species of microbe is available which is capable to produce more esters, alcohols and better alcohol-resistance. With the help of biochemical apparatus and the use of either the dialytic method or the imbedding method, new wine can be ripened by this microbe. After the new wine has been treated for 24-28 hrs, its qualities are equal to the mellow wine which has been stored in the normal way for more than two years, thus cutting down greatly the production period, the qualities of the product is stable and reliable, and the microbe can be re-utilized.
