Abstract:
     The invention uses grape skin as material which is leftover bits in winery to substitute rice, Chinese sorghum or wheat bran to make vinegar. It saves on gain, eliminates two procedures of dextrinization and saccharification and shortens the making period. The vinegar is transparent, agreeable to taste and nutritious. The vinegar residue can be used as high-quality forage.
