| The specific features of this invention are as follows: To glutinous rice, soaked and saturated with adsorbed water, at first a solution containing plain acetolase is added for static culture, which leads to a nutrient solution of white vinegar after fermentation tore place. The nutrient solution of white vinegar after addition of seasonings and complexing agents is then subjected to heating and pasteurization, filtration, blending and packing to give the finished white vinegar. This process is applicable to enter-prises of large, medium or small scales, engaged in the production of vinegar and seasonings. | |||
