| The present invention refers to a method for the production of edible vinegar. It is characterized by using grape as raw material. The said method is rationally designed with simple and direct technological route, ease of operation and excellent effect. The vinegar made by the said method not only keeps flavour of grain vinegar, but also possesses grape fragrance and is rich in amino acids, organic acids, and other nutritive ingredients with features of arteriosclerotic prevention, blood pressure reduction and appetite stimulation. The said vinegar can also be used to make health care drink with heatstroke prevention and antipyretic functions.
