Abstract:
     The rapidly soluble granular sauce or vinegar is prepared from fermented sauce or vinegar paste. Sauce or vinegar paste is diluted, filtrated, and the filtrate is added with edible adhesive and mixed evenly. Swollen granules are prepared by spray-mixing with salt or starch carrier. By vacuum freezing, drying, and dehydrationg, granules with water content lower than 5% or 14% (by weight %) are obtained. The sauce or vinegar prepared by said process is low in water content, uneasily contaminated by fungi.
