Abstract:
     The invention discloses a technology of producing flavour vinegar. Its main technical characteristic is that the raw material treated by normal measure in solid form is put into tower continuously from top portion and falls down layer by layer as controlling, so the oxygen fermetation is supplied sufficiently. After fermetation is complete, the dripping vinegar flows out from the tower bottom. Allthe production courses are operated mechanically. As compared with existing technology, it has the advantages of saving labour by 60%, reducing floor area by 80%, the production rate is four times of raw grain, and it can guarantee the property and flavour of product, and convenient management.
