Abstract:
     The present invention refers to the prodn. of nutritive vinegar with high content of amino acids. It is obtained by packing rice into a bag, which is then soaked, dripdried, hanged to culture vinegar yeast with embeded willow branches treated by acetic vaccine liquor, fermented, sealed, settled, bottled, and heat sterilized. The present method is simple and easy to master. It uses only rice as raw material, without any auxiliary materials, such as wheat bran, rice hust, salt, and preservative or other additives. The present method is easy to manage with reduced labor intensity. The product made by the said method contains 17 kinds of amino acids necessary for human body, and is tasty, mild, and refreshing with good colour.
