| The present invention refers to a process for producing vinegar rich in nutrients. The main raw material is bitter buckwheat. The said vinegar contains acetic acid, reduced saccharides, abundant amino-acids, rutin, nicotinic acid, and lots of trace elements. The raw material is put undder first fermentation and is then further fermented to acetic acid. Part of the twice fermented material is fumigated and the remainder is sealed for ageing. The final product is an excellent condiment. | |||
