Abstract:
     A soy sauce is made up of rice pulp through such steps as mixing, steaming, cooling, bacterination, preparing yeast, mixing with brine, drying in the sun while addition of brine, and filter. An edible vinegar is prepared with any one or combination of straw, leaf, rice pulp and schlempe, through such steps as culturing edible fungus cyclically twice to obtain waste mycelium, mixing with fresh schlempe, steaming, cooling, addition of yeast, fermentation, addition of salt, ageing and filter.
