Abstract:
     The present invention relates to the methods for making sauce and vinegar from the plant wastes. For making sauce, it uses sugar dregs and starch dregs as raw materials through the processes of mixing, steam cooking, cooling, bacteria inoculating, leaven making, mixing saline, exposed to the sun, adding saline, exposed to the sun, and straining sauce, and then the sauce is obtained. The edible vinegar is made up by using any one or conbination of such plant wastes as raw material, as straw, husk, bran, tree branches and leaves, sugar dregs, wine draff, starch dregs and hypha of edible fungi, and through the processes of steam cooking, cooling, adding leaven, alcohol fermentation, acetic fermentation, adding salt, maturing, and straining vinegar.
