Abstract:
     Burnt-rice vinegar is prepared with burnt rice juice in 99.2-99.6% and edible acid in 0.4-0.8% and through the technological steps of roasting rice to burnt, water soaking, filtering to obtain juice, mixing burnt rice juice and edible acid in the said ratio, disinfection and packing. It has moderate sourness and is mellow and delicious. It is easy to prepare and may be produced in available food factory.
