| The main feafure of this invention is to heat the wine properly in a closed system, that results in elevated pressure, thus increases repening reaction temp., accelerates ripening reaction and shortens ripening period remarkably. The fresh wine flavour of delicate and heavy fragnance type white wine, after treated by this method, disappeared and its quality improved significantly. The equipment required by this method is easy to access not only in a large brewery but in a middle-sized and small-sized ones. | |||
