Abstract:
     The average time of maturity of the millet wine speeding up by this invention method is about 10 days. The quality of the wine thus made is equivalent to the mellow wine level naturally matured within 1 year. During the operation of speeding up maturity, different type of color, fragrance, flavor of wine can be obtained by changing technology and an mellow fragrance of the wine will come out early. The maturity of the wine will proceed in a tolally enclosed equipment, then the time of maturity is shorter and the loss of wine is lesser than that of natural matured wine.
