| Various fragrant white or blended spirits from solid fermentation process can be quick-aged in 0.5-40 sec. by a focused strong light of constant or pulse light source, with or without an auxiliary strong magnetic field. The same aging degree and quality as that of long-time naturally aged ones can be reached. Aged white or blended spirits have good color, fragrance, taste as well as style, in which the amount of acetaldehyde, acetal and ethyl acetate increased obviously. By now, there is a test-production scale in a continuous plant for this invention. | |||
