     This invention is characterized by treating wine with infrared ray and controlling the wine temperature properly. After about one week of accumolative treatingtime the wine is substantially as good as that wine mellowed naturally over one year in its color, smell and taste. Thus, the mellowing period is shortened and the artificial mellowing is achieved
