Abstract:
     The invention describes an electro-catalytic process for accelerating the maturation of wine. Making use of catalytically active Pt-Pt electrodes, reference electrodes and constant voltage polarization power source for electro-catalytic reaction, oxidation, reduction, esterification and association reaction of wine are promoted. Proper voltage, temp. of heating and time of processing are to be controlled during maturation and aging of the wine. By treating via this method, the ageing period of brewing wine is greatly shortened, the colour, the taste and the flavour of the wine are both very good, the effect is significant, and prominent savings can be achieved.
