| The present invention relates to the method and apparatus for accelerating the ripeness of spirit, especially of white spirit. The said method features that at room temperature, a certain amount of ozone is led into the spirit to be treated. After storage for 2-3 days, the sharp and bitter taste as well as the irritant smell which were existed in the newly produced spirit are eliminated, the mellow fragrance is enhanced, and the harmful component is reduced, so that the quality of the spirit is improved. The relevant special apparatus consists of an ozone generator, a high voltage supply, a gas pump, a gas flow controller, a time controller, a gas-liquid contactor and spirit containers. The said method shortens the ripening time of spirit, and its technology and apparatus is quite simple. | |||
