| This invention is dealing with wine mellowing, belonging to mellowing realm, which features that new wine is flowing at a rate of 3-10t/hr through a magnetic field for 0-15 times, magnetic flux of which is between 90-300 mT adjustable, then an assistant containing at least one kind of peroxide compound of 0.000001-0.0001 mole concentration is added. After said treatment, the treated wine will have the same color, flavor and taste as that natural mellowing from 6 months to 2 years duration. | |||
