| The infrared ageing process for vinegars and its installation utilize infrared radiation able to be absorbed by vinegar substance to accelerate the chemical and physical changes of new vinegars, and to shorten their ageing period. According to this invention, the vinegar processed by infrared radiation for 50-200 hours has about the same hygienic, physicochemical and sense indices as vinegar stored for half a year or more. | |||
