Abstract:
     A solution is prepared by mixing an aqueous solution of an acid and its salt with low molecular weight polar organic solvent. This solution is used to wash out the hot taste of chilli oil. The soluble materials in the oil layer is extracted by solvent after alkaline hydrolysis and acid treatment, bright and lustrous coloured product without acrid taste is obtained.
