Abstract:
     A process for production of lactic acid fermentation nutriments having low protein content, low catorie value and without cholesterol comprises that lactic acid bacteria as fermentation initiator are added into the water boiled and/or immersed with vegetables in an amount of 1x10 4 lactic acid bacteria per gram of the vegetable water, and the resulting mixture solution is placed at a temperature of 20 deg.C~25 deg.C to make the glycidol contained in the water boiled and/or immersed with vegetables for lactic acid-fermenting.
