Abstract:
     Fish paste products of imitation lobster are a thermally curdled admixture of 1 portion (by weight) of fish paste and 0.2-2 portions (by weight) of cold-modified mannan glue. The fish paste is made of smashed fish and at least one kind of the additives, i.e., table salt, flavouring, starch and thickener. The modified mannan glue is in flakes of less than 3 mm thick, and it makes the curdled admixture taste as such that it is very like a genuine lobster to the mouth.
