Abstract:
     An alcohol-free cold drink with proper and delicious fragrance and taste, and various nutrients is produced by fermentation without adding any additive and colorant. A carefully selected complex fungi that include the so called SY 201 yeast-like fungi and acetate fungi for short As are used in this fermentation process. glucose and tea are the main raw naterials, and other nutrients are added, so as to form the best culture medium. Optimum cold drink can be obtained by deep layer fermentation under specially controlled conditions.
