| The process comprises that under atmosphere of inert gas, esterification reaction of fatty acid with lactic acid is carried out. Esterified product is then neutralized by hydroxides or carbonates of alkaline metal or alkaline earth metal or mixture of carbonates to form fatty acid acyl lactate. The products can be used as additives for foodstuff, especially in a baked foodstuff. | |||
