Abstract:
     The present invention is related to a fatty product produced by use of the process which changes the melting property of the palmitic acid fat and especially increases the solid fat content which can be melted in the temp. range of 25-45 deg.C. The fatty product is applicable for manufacturing margarine, in particular for manufacturing tropical margarine with the improved melting property. The said process is mixed firstly the palmitic acid fat with other fat in a certain dispensing ratio and makes the saturated acid content in the mixed fat to be 20-50%, and makes the ratio of the palmitic acid in the saturated acid to be more than 50%. In the mixing and dispensing ratio there is a sufficiency of the high sinapic acid fat making the sinapic acid content in the mixed fat to be more than 2.5%, and then this mixed fat is made to carry out directional exchange ester reaction.
