| The present invention refers to a method for making cocoa butter from vegetable fat. The said method uses fat (or seed) of Chinese tallow tree and cottonseed oil or soybean oil as raw materials. The cocoa butter is produced by acid exchange under catalytic conditions with methanol as catalyst and ester exchange under vacuum condition. When acid value of the said raw materials is less than 0.5, water less than 0.10%, and impurities less than 0.10%, after deacidification and dehydration, it is ester-exchanged at 80 plus or minus 2 deg.C in vacuum for 30 min. The present invention is used for processing special edible fat, featuring safe and reliable, as well as high yield of cocoa butter. | |||
