| The process of the present invention comprises adding to stillingia fat, which is the raw material, on aqueous solution containing surface active agent or electrolyte, or both surface active agent and electrolyte, or merely drinkin water to disperse and emulsify the fat. Then the emulsion is separated to recover part of the fat which is analogous to natural cocoa butter. After refining (deacidification, decolourization), imitating butter is obtained. This process solves the problems of no-solvent winterizing process of low separation efficiency and low yield of production, and also the problems of solvent extraction and separation process of high investment cost and increased possibility of hazards. | |||
