Abstract:
     The present invention provides a simple method for recovery of almost pure white starch and protein of higher commercial value by a way which prevents mincing the sludge or discoloring the juice during production of rhizome starch and protein. The feature of the above method consists in, while mincing the rhizome, adding at least one of the substances of the following group: sodium thiosulfate, potassium thiosulfate, sodium bisulfite, sodium or potasium sulfite.
