| The present invention involves acid extraction and alcohol precipitation. It uses the mixed saturated solution of oxalic acid and ammonium oxalate as extractant, so as to simplify the decolourization process and to make it possible to remove the heavy metals in the product. High extraction rate and high quality of pectin can be achieved. The said technology may be used in conjunction with other processing technology of papaya. Since it may use either fresh papayas or residuum from the extraction of protainase as material, papayas can be used in many ways and a new way of industrialized production of pectin is provided. | |||
