| Starch (especially the starch of sweet potato, canna edulis, or corn) is used as raw material, phosphoryl chloride or sodium trimetaphosphate as crosslinking agent, carbonate as catalyst, and hydrochloric acid as hydroylzing agent. A two-step crosslinking process is used to prepare instant gel starch with the advantages of short reaction period, high gel strength, and easy gelating with cold water under different conditions of low or high pH value, using or not using sugar, and no need of hardening salt. | |||
